and now that i'm finished waxing eloquent (or whining) about my professional dilemmas...
lemme tell ya about dinner. was groaning to wick that i could not face the dinner we'd decided (half-heartedly i might add) to have tonight and i sorta hinted about dinner out. well, we have plans to dine out saturday night at Little Building Cafe's exclusive valentine dinner, so we figured not necessary to go out tonight...besides, we have my lil one and we're kinda monitoring his food intake. much easier to do when we cook. SIGH. so i'm gritting my teeth and pondering, kinda braindead after a busy day with middle schoolers, and lo and behold, wick comes through with a link to a recipe blog he found on the whole foods market site. i really like that site...been checking out lately. kinda cool. but anyhoooo....one of the blogs was about the best meal of the week. mmm mmm lemme tell ya...the featured one had a pic of this amazing looking frittata. we chatted back and forth and passed around some ideas before settling on the frittata. I've had them before but never really got around to making one.
after a quick trip to the store (we seem to always be low on eggs), wick jumped into the cooking. he sauteed garlic and wilted in some spinach, steamed some asparagus and chopped that up, oooo and some roasted red peppers were another addition. then he diced some leftover chicken breasts that we stuffed earlier in the week with a fennel, mushroom, and bread crumb stuffing. oh yeah, he tossed in a wee bit of cooked whole wheat pasta. hells, it looked pretty damn good just like that. and then i beat the eggs and ground some pepper over them- he shredded some pepper jack cheese (yum) and i covered with eggs. we tossed the whole cast iron skillet in the oven. oh my gosh-- we rounded out the meal with a simple green salad and some wheat garlic bread. fandabulous i tell ya. simple and delicious and quite inexpensive.
and now i'm off to meet a friend for a drink or two before bed. haven't chatted with her in a while so it ought to be good.
