a few alterations and we're off to the races boys & girls

so i was still contemplating my food designs for the week...and i decided that we're definitely having the grilled pork loin medallions with the mojo sauce tomorrow night and i've kicked aside the black beans and corn for charro beans- i think the smoky bacon flavor with provide a better foil to the citrus snap of the mojo sauce. and i just may attempt a quick mexican cornbread that simply has my mouth watering (i must truly be hungry). and then i was thinkin about wednesday evening and i was leaning towards a blackened redfish but i think i'd rather do that fri evening and really put some time into it. so i thought, hmmm we did good ole american burgers sunday evening, digging italian tonight, sliding into cuban/hispanic food tuesday-- let's do something greek wednesday! so.... we are going to have grilled chicken gyros! with a homemade cucumber sauce and all the fixin's. just need to think about sides for that. i have daddy's greek cookbook at home and i think i'll wade into that tonight for my bedtime reading.

i think i'm gonna need to make some wraps or something for thursday... we're going to hear a mayoral candidate at 5:30- right when i need to be feeding the family. all kinds of options spinnin through my head on that front! am thinking simple- something that doesn't need heating. maybe some chicken with bacon and lettuce and tomatoes (ooo like a blt wrap)...oh my gosh, i think that's gonna be the plan. i'll make that blt dip (equal parts mayo/sour cream, crumbled and crispy bacon, sliced grape tomatoes, a sprinkling of chopped chives, freshly ground pepper) and oh my friends, a heavenly bite i tell ya. imagine that dip slathered on a whole wheat tortilla with leafy green lettuce and grilled chicken. it's just simple and simply amazing. add a small bag of sun chips for crunch and an apple or orange. mmm mmm i'm just sure i'm hungry now. everything sounds fabulous to me.

will keep an open gastronomical mind to friday night. maybe dad will drive over from columbus and we'll grill a steak and bake a few potatoes and toss together a cobbler. or maybe we'll give that blackened redfish a go- serve it over parmesan grits and round out with a leafy green salad and a light dressing- or that strawberry spinach salad if wick hasn't smashed all the strawberries. ah, food is such a comfort.

i'm working on my grocery list now- gonna head on out shortly. a good day to all!
