mr mojo risin....risin...risin...

am in a slightly DOORS-y mood and i was checkin out SAVEUR (love that magazine, love that site) and i happened across this recipe for mojo sauce and i was inspired! the Wick has informed me that it's my turn to do some of the cooking (bless him, i cannot complain, he does EVERYTHING for me when i'm feeling all scrunched for time). so anyways, i thought i'd share the recipe and my inspiration for tomorrow night's meal. tonight is spaghetti that i tossed together yesterday and it's been cooking (the gravy that is) since about 4 yesterday afternoon. my house is smelling RIGHTEOUS! i'm thinkin a simple salad tossed with olive oil and red wine vinegar, a few grinds of fresh pepper, and a grating of some peccorino romano ought to be a perfect complement...ooo and perphaps a few slices of garlic bread and some italian sausage. yes, i'm already salivating. but about tomorrow: i'm thinkin this mojo sauce is a fresh treat for the senses; i love to smell oranges when i'm cooking and can i ever have too much garlic?

1 small head of garlic, peeled and separated
1 tsp. salt
1⁄4 cup fresh bitter orange juice or 4 tbsp. fresh lime
juice
4 tbsp. fresh orange juice
1⁄4 cup olive oil
1⁄2 tsp. fresh oregano, chopped
1⁄4 tsp. ground cumin
Pinch dried oregano, crushed
Salt to taste

1. Crush together garlic cloves and salt with a mortar and pestle, and put into a medium bowl.

2. Stir in fresh bitter orange juice or fresh lime juice and fresh orange juice, olive oil, chopped fresh oregano, cumin, crushed dried oregano, and salt to taste.


oh my gosh it sounds yummy. think i'll give it a go tomorrow night with a pork loin that i'm going to slice into thick medallions and grill. mmmm along with some black beans that i'll roll around in a sizzling skillet of onions and top off with some sweet corn and a fabulous salad. the citrus will help us rush in spring and just sounds appealing to me. mmm could even slice that grilled meat thinly and wrap in whole wheat tortilla with a dollop of guac and a slather of sour cream- would make great leftovers i'm thinking!
